Anyone who has kicked around the country western world a little while has heard of Cavender’s Western Wear. Jacqueline Skeens Cavender (of the eponymous family) just released her first non-profit cookbook, As The Spur Stirs.
As the Spur Stirs features a collection of recipes from Cavender’s family, friends and celebrity supporters including First Lady Laura Bush, singers Pat Green, Trace Adkins and Randy Rogers and “King of Country” George Strait, whose secret “King Ranch Chicken” recipe Jacqueline is letting us share with you! The cookbook was inspired by her mother’s battle with cancer almost two decades ago and her father’s current battle. She hopes it will is raise awareness and funds for research and patient care–all proceeds will go to The American Cancer Society and Cystic Fibrosis.
“This book is filled with so much more than just recipes” Jacqueline told us. “What we’ve stirred up together is testament to the ways we are all interconnected through something as simple as sharing time in the kitchen with loved ones by capturing that, maybe we can help those battling cancer and cystic fibrosis so that, they too, will have a chance one day to leave their own legacy behind for others.”
George Strait’s King Ranch Chicken
4 boneless skinless chicken breasts
1 (11-ounce) package corn tortillas, each tortilla cut into 6 pieces
1 onion, chopped
1 (10-ounce) can cream of chicken soup
1 (10-ounce) can cream of mushroom soup
¾ cup chicken broth
1 (10-ounce) can tomatoes with green chilies
8 ounces shredded cheddar cheese
Arrange the chicken in a greased 9×13-inch baking dish. Top with the tortilla pieces and sprinkle with the onion. Combine the cream of chicken soup, cream of mushroom soup, chicken broth and tomatoes with green chiles in a bowl and mix well. Spread evenly over the onion and sprinkle with the cheese. Bake at 350 degrees for 1 hour or until bubbly.
